For carving, you need to choose fresh fruit and company. Some vegetables such as apples, watermelons, kiwi oranges, cantaloupe, potatoes, radishes, and squash are perfect for carving. This fruit can be used to create decorative flowers as well as birds, boats, and elaborate dragons.

Preparation
You have to wash the bits in the salty water, which reduces the loss of color. It should be kept moist by spraying regularly with water to keep it from becoming black. Potatoes should be washed after peeling and again after engraving to avoid browning.

Before carving, the fruit should be washed and thoroughly cleaned. Use a sharp knife with a bronze or stainless steel knife. The usual steel blades of a knife can cause discoloration of vegetables.
