The discovery of the sea route to India in 1498 by Vasco da Gama signaled the beginning of the establishment of territories controlled by the European powers in the subcontinent. The Portuguese formed bases in Goa, Daman, Diu and Bombay, among others. The French followed the Dutch in the seventeenth century.

Later in the colonial period, with the British occupation, European cuisine was introduced in India, which further diversified Indian cuisine. The English East India Company established a first base in Bengal in 1757. By the 1850s, the British already controlled almost the entire subcontinent, including the territory corresponding to present-day Pakistan and Bangladesh.
