Castro and Gonzalez is a production firm Guijuelo Iberian Ham created in 1910 by Aurelio Castro, when its activity was reduced slaughter two pigs a week to sell very locally. From these principles, Castro and Gonzalez has respected the traditional ways of healing the ham as is done in Guijuelo.

Another important factor in the future of this historic company milestone comes from the 90s to the realization of a pig own that enables full control of the product, which is so homogeneous in quality and production.
