How the idea is born ...
In the farm and ranch EL 25, owned by my father Don Jaime Sanchez Montoya, worked many people who had to feed them every day, that's where from a very young, I was born curious about art culinary, since then I set a goal that when it was big and had the possibility, would put a regional food restaurant to not lose the traditions of our origins since which come from ranch.
Later in the 2000s, he emigrated to a small town belonging to the county of Miami Florida called Cayo Marathon, where he started working as a cook in a restaurant called George Tabernas, whose owner was a Greek Chef. From there, a friend of mine who has a restaurant in Blaine WA, stuck on the border with Canada to work as the Director in Chief of the kitchen called Paso del Norte invites me.
I also worked as a Chef at Chihuahuas Restaurant in Frendale Washington for a while.
At the time I came to Culiacán but I was still worried about having my own restaurant.
So it was that in 2013 my father gave me the property that is located in San Pedro, Navolato, and we started to form what is El Capricho de Juan Tomas.
One day I was in the place they asked me what his name was and I answered them:
It will be called El Capricho de Juan Tomas, and here I am going to make my restaurant that I have longed for so much.
And why the whim?
Because it is a whim to have my own restaurant with its own essence and that no other has it since we will be connected with the ranch and with nature.
